Lunch Time- Pie Iron Cooking


It's lunch time here at Four Seasons, and it has all of us thinking about our favorite camping treats. An all time favorite of mine is pie iron cooking. If you haven't tried it before, it's a simple way of making terrific sanwiches in a matter of minutes. It's hard to beat a toasted sandwich.
Using two pieces of bread, butter 1 side of each slice. Place 1 slice of bread, buttered side down into the bottom pie iron cavity. On top of the bread place your favorite sanwich filling. Top with the second slice of bread, butter side up, close the pie iron, and place over the grill, fireplace or campstove. Cooking time will vary, but 3-4 minutes is usually sufficient for each side.
Scott's favorite filling is pizza sauce, cheese, and pepperoni, followed up with an apple pie sandwich.
My kids prefer peanut butter and jelly, which turns this ordinary treat into a gourmet meal.
I like just about anything, but have been trying different recipees out of the pie iron cookbook that we sell. You can get as fancy (or simplistic) as you want. If you haven't tried it yet, make it a staple in your camping routine!
